With the Caja Monovarietales cataloging, we bring directly to the table the selection of green picuales, arbequina, hojiblancas and cornicabra olives in their best state to obtain four unique olive juices. Early oils are those that are extracted from green olives that have not yet completed their ripening process. Although the fat yield of these fruits is lower and the harvest is more arduous, the result is an olive oil whose raw flavor is exquisite. These four premium EVOOs preserve all the characteristics of the early harvest and reflect our great effort both in the field and throughout the production process.
