The taste phase presents a moderate and brief bitterness, which quickly gives way to a sustained and persistent pink pepper spiciness. A very harmonious, balanced and very fresh whole with an excellent aftertaste and a very nice length in the mouth (taste it "natural" to experience it). FOOD PAIRINGS Salads/Vegetables: with all kinds of artichokes! Or with fresh summer salads, such as a tomato, onion and pepper salad, or with a fresh tuna salad. Fish: best with oily fish (such as sea bass) or shellfish (the almond notes of Erbaria will go wonderfully well). Meats: with poultry, lamb chops with roasted French fries, or even stewed lamb. Pasta: Pasta with a rather strong sauce, such as amatriciana or puttanesca. For the latter you can also add our Kalamata Olives (pitless) as well as our hand-harvested wild Capers. Pizzas: with grilled vegetables (eggplant, zucchini) and pecorino :) Erbaria offers an intense "sensory personality" on the nose, complex on the palate, with a medium but sustained bitterness and a high spiciness (when tasted "straight"), and a very nice length on the palate. We prefer to pair it with dishes of medium or high taste intensity (and less so with dishes based on cream or fruit).
