Our 1st cider in collaboration with an organic Norman producer. The apples, selected when ripe and then pressed, have been fermenting since October 2021. Then, an assembly in January 2022 and a natural foaming for several months. This raw cider with a tense character reveals subtle notes and an assertive bitterness.
