Sardinian honey from Sulla

The sulla, or Grass Sulla, is a leguminous plant belonging to the Fabaceae family. It is present in central-southern regions because it is a plant which, although it grows well in clayey soils and is not afraid of drought, does not resist too cold temperatures. The beautiful flowers of sulla are a rich source of nectar for bees. By collecting the precious substance from flower to flower, they also allow it to be fertilized. It is a fast crystallizing honey, forming medium or fine crystals. When it is still in the liquid state, it has a color ranging from transparent to straw yellow, it has a very delicate flavour, with vegetal notes or fruity components. Even the smell is not particularly significant: it is often described as smell generic honey with vegetal and straw notes.
