Southern italian capers are the core botanical, infused and distilled at low temperature to capture their tangy, briny flavour. The spirit is then meticulously combined with a selection of other ingredients, including juniper and parmesan cheese, which provides the savoury "umami" sensation on the palate. This blend is then set to rest in a vintage cognac barrel for several months to give it roundness and depth, before being slightly filtered and botteld.
