White pepper is made by harvesting the fully ripe, orange-red berries, packing them in large sacks and soaking them in water for about a week. This softens the flesh and allows it to be washed away, leaving the white pepper seeds. White pepper is milder than black pepper and has its own aroma. Tastes good in fine light sauces, salads, meat, fish - in practically all dishes. Also available in the Spice Mill.
