Characteristics: Cassia is obtained from the aromatic bark of an evergreen plant of the laurel family, characterized by small ivory-colored flowers and red berries. In ancient Arabia it was used during religious ceremonies, in offerings to the sun and to light sacred fires on the occasion of sacrifices. How to use: It is a fundamental ingredient of a traditional Chinese sauce for fish, prepared with soy sauce, rice wine and broth.
