From the Fabaceae family, the adzuki bean or Japanese red bean is a species of climbing annual plant. The most common varieties are red, but there are also seeds of different colors (white, gray, black, spotted...). Originally from the Himalayas, the adzuki bean was cultivated in China and Korea and then imported to Japan where it is now the most popular legume after soybeans. Its cultivation and consumption in cooking and baking is now widespread in East Asia.
