To create this cuvée, we chose a plot of old Chardonnay vines located in the town of Pierreclos. The vinification and aging of a sulfite-free white requires a lot of care and attention and this begins at harvest, it requires a perfectly healthy harvest. A small amount of sulphite was nevertheless added before bottling to ensure good conservation. It is a white full of freshness, with citrus notes and endowed with a good length in the mouth. Product from an HVE operation Elaboration Reasoned culture. Fermentation in thermo-regulated stainless steel vats, Malolactic fermentation. Aging in stainless steel vats, No added sulphites.
