Boutargue or bottarga, also nicknamed “Mediterranean caviar” is an artisanal product, 100% natural. A specialty of countries around the Mediterranean, it has been known since Antiquity Bottarga comes from mullet eggs, a rare fish that can be difficult to catch. Once harvested, the eggs are salted, dried and pressed.     Boutargue should be consumed at room temperature. Boutargue can be enjoyed as an aperitif, simply on a slice of bread and a little olive oil. In Tunisia, iced boukha is traditionally served to accompany it. In Japan and Taiwan, which are the other countries of bottarga, they prefer to serve it with sake.  In the kitchen, bottarga cannot be cooked but it lends itself to many combinations depending on your inspiration. It excels grated on a dish of pasta, rice, potatoes cooked in their skins with a little olive oil. It is exquisite grated over a boiled or fried egg.
