Box of chestnuts in pieces

The Chocolatier's candied chestnuts, after being delicately selected, are cooked with precision to obtain the ideal softness. They are then immersed for several days in the sugar syrup and then stabilized in order to finalize the candying and preserve their subtle taste (about ten days is necessary for a successful candying). The "French" glaze coats the chestnuts with a thin layer of sugar before being dried.
