A symbol of delicacy and excellence, FAUCHON candied chestnuts are made according to the traditional recipe in order to preserve the flavors of yesteryear and make them an exceptional dish. Selected from the finest fruits of Naples, they are carefully sorted for their round shape and regular size. Wrapped two by two in tulle muslin, the chestnuts are candied for 7 to 10 days in a syrup made from sugar, glucose syrup, and Bourbon vanilla from Madagascar. During cooking, the temperature is gradually lowered to allow the syrup to gently penetrate the heart of the fruit while driving out the water. Once candied, the chestnuts are covered with a thin film of translucent, satiny icing sugar syrup, thus obtaining a perfect glaze.
