Originating from the Sierra de Madrid (Bustarviejo). Nutritional value and benefits. 100% natural honey, without preservatives or dyes, only honey. Antioxidant properties and high content of mineral salts. Rich in vitamins, minerals and antioxidants. Collected mainly from the flower of lavender, heather, blackberry, holm oaks and oaks from the Sierra de Madrid (Bustarviejo). THE COLLECTION PROCESS Uncapping: which consists of removing from the honeycombs the opercula that the bees have built to cover the cells, in order to preserve the precious element. A stainless steel barbed comb and an appropriate knife are used for this. Honey extraction: performed by centrifugation in a stainless steel radial mechanical extractor. Decanting and filtering. Once this process is finished, the honey goes to the decanters (stainless steel drums) where it remains for several days so that all the impurities (waxes from the extraction) are naturally separated by density difference, at room temperature. Immediately afterwards, the honey is filtered with steel and nylon filters, being ready for packaging.
