Our Classic from the Imperial Selection is taken from the Acipenser Schrenckii, which, like the so-called Amur beluga sturgeon, is also native to the border river called Amur. However, the Imperial Classic Caviar is a purebred sturgeon, whereas the Amur Beluga sturgeon is a so-called hybrid. In terms of taste, the two types of caviar are very similar and are very mild with slightly creamy notes. The Imperial Classic tends to be dark brown in color and has a grain diameter of a good 2.5 mm. Due to its balanced taste, it is popular with many of our customers and can also score points in terms of price.
