Curry powder, although available in paste, is often preferred in its powdered form, releasing toasty aromas and fruity, warm, velvety, and sometimes spicy flavors. Originally from India, this blend of spices, identifiable by its orange-yellow color, is not a single spice but a combination of numerous spices. Its composition, which varies according to tradition, can include up to 70 spices, with main ingredients such as turmeric, cumin, coriander, cloves, cardamom, and anise.  In addition to its role in enriching culinary flavors, curry powder offers health benefits thanks to the antioxidant properties of turmeric, coriander, and ginger, which fight against cellular aging. The cardamom present in curry powder helps reduce stomach spasms and offers benefits linked to the richness of magnesium, supporting the functioning of nerves and muscles.  Curry powder fits into many Indian dishes, such as vindaloo, tikka masala, and rogan josh, and can also add an exotic touch to Western recipes. It goes perfectly with meats such as veal, pork, and chicken, as well as fish such as cod, monkfish, and sole. Its use in vinaigrettes enhances the taste of salads, and it even ventures into desserts with exotic fruits or associated with apples, pears, or a chocolate cake.  To fully reveal its flavor, curry powder is ideally added at the start of cooking in a fatty substance such as ghee, butter, or oil, especially in simmered preparations or in sauce over medium/low heat. For recipes requiring prolonged cooking, an additional tip can be added at the end of cooking, guaranteeing an optimal taste experience.
