The blond caraway is reminiscent of cumin and anise, giving off a warm, sweet, slightly peppery aroma with a lemony note. We find blond caraway in many oriental dishes such as curry, lentils, rice. In Europe you will find it in sauerkraut, stews, potato salads, beets, cabbage, gingerbread, brioche and other pastries. It traditionally accompanies certain cheeses such as gouda, livarot and munster and is a great flavoring for pork or poultry dishes.
