Once drained, it is cooked in water with sugar: in syrup. When it is again drained, dried and rolled in sugar, we obtain our candied ginger. The last touch lies in the coating: a thin layer of high quality dark organic chocolate (58%), that of the chocolatier Kaoka 🍫.
