Ginger, a plant native to Southeast Asia, has been cultivated for over 3000 years. Its rhizome (the root) is consumed in various forms: fresh, in powder, in brine… It is mainly used for the preparation of candied ginger.

Several varieties of ginger exist, all with different tastes and qualities depending on where they are produced. OUR ORGANIC GINGER IS GROWN IN CHINA. IT IS HARVESTED IN OCTOBER THEN TRANSFORMED INTO CANDIED GINGER ACCORDING TO A TRADITIONAL CANDYING PROCESS.

1. SHANDONG SECTOR
The ginger grown by our PRODUCER PARTNER in the Shandong region is a very widespread variety in China. Often used fresh, this ginger has a MORE SPICY AND PEPPER flavor. Our CERTIFIED ORGANIC GINGER is candied and crystallized with cane sugar from India, ALSO CERTIFIED ORGANIC.

2. FUJIAN SECTOR
Taiwanese white ginger from "Fujian", is known for its SWEET AND LESS SPICY FLAVOR, SLIGHTLY LEMON. Our ginger, CERTIFIED ORGANIC AND FAIR TRADE, is candied and crystallized according to a traditional process with cane sugar from Paraguay, ALSO CERTIFIED ORGANIC AND FAIR TRADE.
