Peppercorn berries are not picked until completely ripe and entirely red. The peppercorn plants are grown in Penja Valley in Cameroon. The plants are naturally enriched with nutrients from the volcanic soil of Penja. The unique soils give the pepper a pure taste. After harvest, the berries are pre-cooked in boiling water, they are then dried on tarpaulins to harden. After this process, they are then selected by hand to remove any impure or damaged peppercorns. Penja pepper has specifically become popular amongst Michelin-star chefs for its signature taste.
