Located in the south-east of the Châteauneuf-du-Pape appellation, the Cailloux Dorés vineyard benefits from a unique soil: rolled pebbles, sand, clay and limestone. This mineral blend promotes the concentration of aromas while maintaining a pleasant freshness. Thanks to a south-eastern exposure, the grapes reach perfect maturity. The vines, aged 50 to 90 years, go deep into the soil. They produce rich, expressive and balanced grapes. The wine is based on 70% Grenache, accompanied by Syrah and Mourvèdre. It also includes traditional grape varieties: Counoise, Cinsault, Terret noir, Vaccarèse, Clairette and Bourboulenc. This harmonious marriage brings finesse, complexity and length to the vintage. Each harvest is carried out by hand. This treatment allows us to keep only the most beautiful bunches. The grapes are vinified with care. Fermentation and maceration last between 20 and 30 days. The estate uses concrete, stainless steel and wooden vats. Part of the wine (10%) then rests in demi-muids, which gives it depth without masking the fruit. Malolactic fermentation is complete. The wine retains less than 2 g/L of sugar and achieves a nice balance at 14.5% alcohol. On the nose, the wine reveals aromas of black cherry, blackberry, liquorice and garrigue. On the palate, it is fine, ample, with a lovely freshness. To fully appreciate it, it is recommended to decant it one hour before serving. This organic Châteauneuf-du-Pape enhances dishes such as roast lamb, Provençal stew, duck breast, or even Peking duck. It also goes very well with mature cheeses.
