Thyme is used liberally in Greek cuisine and is a great way to bring out the flavors of chicken and beef. Or can it be vegetarian? Then you bring variety to your stews and salads made from root vegetables with thyme. The combination with other Mediterranean spices such as rosemary and oregano is particularly popular. Its intense, intoxicating flavor also pairs well with garlic. This makes it ideal for Greek cuisine! Premium thyme for lovers … the “Terroir” makes the difference! As with a good wine, the aroma of the thyme is also heavily dependent on the ecological conditions and the processing by the producer. The chemical makeup of the flavorings varies depending on where the herb grows. In botany, this is referred to as the expression of different chemotypes. This explains the big difference in quality between different dried thyme products. From cultivation to climatic conditions to processing: all of these factors influence the taste. There is a world of difference between the spice, which you can buy for a few cents at the discount store, and thyme, which you can find at your delicatessen. Our premium thyme from Greece lives up to its name. He comes from the island of Limnos, which is almost uninhabited. So undisturbed by humans, our ORGANIC thyme can develop its full potential. Lemnos: The island of a thousand herbs Limnos is the nursery of the finest herbs in Greece. This is due to a lot of untouched nature, which is hard to find today. It is one of the larger Greek islands that is off the tourist track. In addition, the Limnos is as good as uninhabited. That means: Lots of space for the cultivation of the finest wild herbs! Thus, Lemnos is a true paradise for herbs. Because the volcanic soil of the island, in combination with its dry climate, tickles the special thing out of the little plants: In these truly optimal conditions, the essential oils of thyme - carvacol and thymol - can develop optimally. The "universal spice of everyone" suddenly presents itself with unknown aromas if it is allowed to thrive under limnic conditions. Limnos has been known for its healing earth, the "terra lemnia" for centuries. The red-brown, mineral earth was used as a proven medicine. So it's no wonder that the premium products from the world of herbs call this earth their home. Our producer: Nikos His heart beats for the variety of herbs in Greece. But many of the local herbs are threatened with extinction. Nikos recognized the need for action. With his organic farm, he is committed to protecting nature. The small farmer follows the philosophy of seeing nature as his mentor and learning in cooperation with her. Nikos produces herbs of outstanding organic quality and does so with the smallest possible ecological footprint. For example, his company has committed itself not to harvest wild herbs from nature – as is the norm for many producers in Greece. Because that would have long-term negative consequences for the preservation of the flora and biodiversity of Lemnos. With his company he is working to reverse this trend. Through his actions he wants to preserve the endemic species of flowers and enrich the island with more plants. He only uses environmentally friendly cultivation and harvesting methods. For example, he does not water his herbs. Both in the fields and in the yard, the herbs are largely left to their own devices.
