It sounds exotic at first - and that's how it tastes: With its nutty-tart taste, the creamy sesame paste brings a lot of pep into your kitchen! Because tahini can do much more than just “hummus”: the white mush is practically the refined cousin of peanut butter – and just as versatile. Tahini adds depth to anything you cook without overpowering other ingredients. You can conjure up exotic dips, sauces, dressings and even soups from the delicious white sesame cream. Or add it to your smoothies as a superfood. But Tahin also has something up his sleeve for those with a sweet tooth: such as healthy fitness bars, unforgettable chocolate spreads, Tahin honey biscuits... Let the all-rounder Tahin surprise you! The craft makes the difference Thanks to the centuries-old artisanal tradition of our producer Despina, our white tahini has a silky smooth texture, creamy consistency and is packed with healthy nutrients. Unfortunately, there is also a lot of 'bad' tahini on the market. Then the sesame butter tastes bitter due to rough processing or has dominant roasted aromas. The texture is gritty and the consistency oily. Not exactly a taste experience that tempts to be repeated... In contrast, our premium tahini is tasty enough to eat by the spoonful! It has a subtle, natural sesame flavor that's slightly spicy but not at all overpowering or even bitter. White tahini in particular is known for its particularly mild taste. To produce white tahini, the skin is dissolved with the help of steam and the “naked” sesame is gently ground. “Using old stone mills is key to making the best tahini,” Despina tells us. “Because grinding with stones keeps the temperatures low. The lower the temperature, the higher the nutritional value of the tahini.” Fine tahini from Mount Paggaio A small hamlet on the green slopes of the “golden” mountain of Paggaio. The residents here are very proud and describe it as “an attraction of tradition and beauty”. And indeed: the small town impresses its visitors with traditional stone houses. With old tobacco shops, from "yesterday". With narrow stone streets and a historic church from 1835. Countless stone wells, old troughs and small bridges run through the village. Water has been the dominant element for many centuries. There used to be 24 watermills here. Today only one remains in operation: that of Despina's family - harnessing the power of the wet element to transform sesame into our fine white tahini. Our partner: Despina Our tahini comes from this tiny village on Mount Paggaio. This is where Despina lives. Her father was a local producer of traditional tahini for many years. Now she is following in his footsteps. This is a fifth generation company. It was founded by Despina's great-great-grandfather in the 19th century. Despina continues the centuries-old family tradition of making handmade tahini. To do this, she uses the power of her great-great-grandfather's water mill. He first rented it from the Turks in 1880. And the old mill still serves what is probably the finest tahini in Greece today. Despina's father used to grow his own sesame. In the meantime, however, the family obtains the finest sesame from northern Greece and the Turkish coast. "I've had the same great suppliers for 30 years now." her father explains. “Because great sesame is essential for great tahini. We buy very expensive sesame and avoid the cheap ones from Africa or India, because there the quality control during cultivation is very low”.
