Do you know Lapsang Souchong? It is said that this tea originated by chance in Xingcun Village during the Qing Dynasty (221 BC). It is still a specialty of Fujian province today. It is a particular tea with a very strong flavor. This comes from its manufacturing process, because after oxidation it is dried again in baskets placed over a spruce or cypress fire which gives it this pronounced taste of smoked tea. This Tarry Lapsang Souchong is grown in the Wuyi Shanmai massif (in Fujian). Its brownish leaves give a coppery orange infusion. It is easily drunk during a meal (and not just to accompany cold meats as we read too often!). A smoked tea with character with a lingering and spicy taste.
