The rather light roasting profile retains the fruity deliciousness of the coffee, while controlling the acidity which remains very pleasant and fresh. The finish brings a sweet comma of astonishing liveliness. A coffee that reveals all its potential using gentle methods. As part of Grupo Las Nubes, it is one of seven farms in the Matagalpa and Jinotega region. Nestled within La Reserva El Arenal, coffee grows there in the shade of the forest.     Victor is the third generation of his family to own coffee farms since 1937. The Santa Maria property in Nicaragua fell on hard times during the civil war when the family was forced to leave their land. But Victor returned to purchase and restore the farms his father owned with the idea of ​​producing high-quality coffee. When he won the Cup Of Excellence in 2017, Victor attributed the farm's success to the team he works with.     The cherries are harvested by hand and transported to the dry mill in boxes to protect them from damage. They are spread out on raised beds in the shade to protect them from the sun. The drying process lasts 40 days, after which the cherries are sorted and graded.
