Maseca flour is flour obtained from corn that has undergone a nixtamalization process. A very complicated word to say that the corn has been treated with lime water, or more traditionally with a mixture of water and wood ash. It's the alkaline solution that gives corn tortillas and tamales their pleasantly sour flavor. Nixtmalized corn flour is like any other flour best kept sealed at room temperature. Because the corn has been treated with limewater, you cannot substitute non-nixtamalized corn flour in recipes that call for nixtamalized corn flour.
