Together they focus on the consistency and quality of the cup profile. Daye Bensa is a cooperative that brings together cherries from different producers, mostly organic “by default”. Indeed, the lack of access to resources in recent decades has limited the use of chemical fertilizers. In comparison, in several Latin American countries, some farmers decide to switch from conventional production to certified organic production to access a price premium.
