Smoked eggplant caviar

Eggplant caviar is one of the pillars of my childhood. And at home, it is prepared with aubergines delicately smoked over a wood fire. It is a work of patience whose reward is worth it: an aubergine with a magnified taste which remains delicate and which is not lost in an overflow of flavors.
