Origin Madagascar A very spicy black pepper that hides its woody and fruity notes well.   Ideal for white meats, gratins and pastas or on a simple tomato salad!   It goes ideally with braised red meat, or fish roasted in butter on its skin with thyme and bay leaf.    It combines baked sea fish with fried Charlotte potatoes.   It enhances a braised piece of beef with a spicy jus.   It flavors sweetbreads glazed with sweet spices.    It subtly spices up fresh sheep’s cheese with herbs.   It enhances a roasted pineapple with old Antilles rum. ;This pepper delivers delicate notes of sweet spices reminiscent of cloves in an infusion background or mixed with burnt scents of roasted herbs and garrigue.    On the palate, it presents a soft texture on the attack, which evolves into smooth and warm notes enhanced by a biting and refreshing finish.
