Our cold-pressed olive oil is described as "extra virgin", i.e. an olive oil of the highest quality - obtained directly from olives exclusively by mechanical processes without the effect of heat. Mild and fruity in taste, it has a beneficial composition of fatty acids. The olives are harvested just before they are fully ripe. On the same day, the olives must be freed from the pits and washed, then ground to a pulp and then pressed.
