Ventoux Organic Red Wine 2018 "JAMES"

Grenache, Syrah, Mourvèdre, Carignan, made with James, on the label. The fun element of this cuvée lies in the technique chosen for its aging. We used egg-shaped vats. The ovoid shape of our tanks induces the creation of circular movements which gently stir the wine during its aging. Thus, the lees in suspension, which are the residues of the yeasts which were used to transform the grape juice into wine, remain in suspension. They do not settle to the bottom. Little by little, the wine will consume these lees which give it roundness and suppleness.
