Smoked sturgeon butter

We created this recipe in partnership with Maison Caviar House – Purnier. Their sturgeon fish farm used to produce Aquitaine caviar is located in Montpon-Menesterol in our department. From smoked and salted sturgeon fillet, we have created this original spread.
