THYME HONEY 500 g

Thyme honey is harvested at the end of spring in the apiaries of the Montes de Toledo and during the summer next to the Hoces del Duratón National Park in Segovia, when we take our bees to spend a cooler summer. \n \nIt differs from other honeys because its aroma is much more intense and it is impregnated with the characteristic aroma of the plant. With a very sweet but at the same time delicate flavor, which causes fascination in lovers of pure honey from bees. \n \nBotanically, the vulgar name of thyme, to which an adjective such as "olive tree", "cabezudo", "de San Juan", "salsero"...), corresponds to different species, most of the genus Thymus , but others of close genera of the same family, labiates (Lamiaceae). The most frequent species is Thymus vulgaris. \n \nThe thymes are part of the dry and sunny scrubs of the Mediterranean holm oaks, where they can be the dominant species, forming the thyme groves. In them there are also other labiatae: rosemary, sage, lavender, cat's tail, lavender; some herbaceous legumes: clovers, alfalfillas, cornicabras...; other woody legumes such as brooms; and other plants such as resedas, rockroses, jaguarzos... \n \n&nbsp; \n \n<strong>PAIRING</strong> \n \n&nbsp; \n \nThe intensity and persistence of its aromas and taste make these honeys highly appreciated by those who are attracted to strong sensations.
