Lumpfish eggs are the economical alternative to caviar. They are in fact called the caviar of the North. They are eggs provided by a marine species that lives in Norway as far as the Gulf of Biscay. This is a species that lives in close contact with the seabed, reaching depths of up to 400 metres. During spring, lumpfish gather in very shallow waters for mating. Each fish can lay up to 600 grams of eggs.
