Technical and organoleptic characteristics Memento extra virgin olive oil is a high quality oil certified by many chemical parameters, including the high content of polyphenols, the very low acidity of 0.2% and the minimal presence of peroxides. Memento EVO oil has a medium fruity, herbaceous taste with hints of artichoke and almond aftertaste, a net olive scent with herbaceous hints. Supply chain and production Memento is obtained from selected short chain olives of the Ogliarola Bari and Coratina varieties. Cultivated within a maximum radius of 10 km from the mill, they are mainly harvested by hand at 60% of veraison (ripening). They are therefore subjected to careful selection and processed in a very short time, only by mechanical procedures and with cold extraction, in order to avoid any sort of fermentation. The rigorous production process allows to obtain an exceptional product, which preserves the health properties of the fruit to the maximum. Never aggressive, it is ideal for daily use.
