Olio Memento - 100% Italian extra virgin olive oil from Puglia
Memento is a range of products consisting of 100% Italian extra virgin olive oil, oils
flavored and artisanal pasta produced in Molfetta (Bari), in Puglia, a renowned Italian region
for the production of oil and gastronomic excellence.
Technical features
Memento extra virgin olive oil is a high quality oil certified by many parameters
chemicals, including the high content of polyphenols and the very low acidity of 0.2%. Memento oil is
also DOP Terra di Bari - Bitonto.
Memento EVO oil is a highly distinctive medium fruity: strong taste but always
sweet, herbaceous with hints of artichoke and almond aftertaste, clear scent of olive with
herbaceous hints.
Supply chain and production
Olio Memento is obtained from selected short chain olives of the Ogliarola Barese and
Coratina. Grown within a radius of up to 10 km from the mill, our olives are harvested
mainly by hand when they reach 60% of veraison (ripeness). I am therefore
subjected to careful selection and processed in a very short time, only
through mechanical procedures and with cold extraction, in order to avoid any sort of
fermentation. The rigorous production process makes it possible to obtain a product
exceptional, which maximizes the health properties of the fruit, such as the high
contribution of polyphenols.
Uses in the kitchen
Versatile and distinctive, Olio Memento enhances both traditional Italian dishes and cuisine
fusion and more contemporary, enhancing the ingredients in a wide variety of recipes. Never
aggressive, it is ideal for daily use and appreciated by a wide range of audiences. For
special recipes are also available complementary products such as EVO oils with
natural extract of lemon, garlic or chilli. The range is completed by the special orecchiette
with burnt wheat, obtained from 100% Italian semolina, with a slightly rough texture and flavor
rustic.
