The Oltresole BIO 5 Cereal Flour is produced by grinding the various cereals contained within and is certified organic. In particular, it is made up of: Organic Soft Wheat Flour type "0" BIO Wholemeal Rye Flour BIO Senatore Cappelli Wheat Semolina BIO White Spelled Flour and BIO Gentil Rosso Wheat Flour. Its full and aromatic taste given to it by the mix of cereals, many of which are ancient, makes it particularly suitable for the preparation of all baked goods such as bread, bread sticks but also pizza. All the flours and their percentage of use that make up this multigrain flour are carefully chosen to combine beneficial and nutritional properties in a single package, offering a balanced taste. PAIRING: 5-grain wholemeal flour is excellent for the preparation of pasta, pizza, bread, and focaccia, giving the product an intense and fragrant flavor thanks also to the presence of rye flour which gives a wholemeal flavor to the mixture. WELLNESS AND HEALTH: 5-grain flour is rich in fiber, mineral salts, essential amino acids, various vitamins such as those of group B, all necessary for the proper functioning of our body. All qualities that are brought by the different cereals that make up this mix of flours. CURIOSITY: The Gentil Rosso contained in the 5-grain flour is an ancient variety of wheat that was cultivated in Italy at the beginning of the 1900s and was the most cultivated wheat in the whole peninsula for 30 years. Its characteristic is a fairly high spike with a reddish color when ripe. It was replaced in favor of more productive grains with a lower ear. Like all ancient grains it has a good protein content but little gluten so at the level of bread development it is less than modern grains, however, we will have a well-scented and tasty bread. To favor bread making, it is combined with soft wheat.
