The ciders and perries are produced, from fruit to bottling, by Paul Caillouel in Normandy. 

The family property is located in the Calvados controlled appellation zone, in Eturqueraye to be exact. The foam forms naturally after a slow fermentation of 6 months. 

Sulfites may be present in small quantities, always well below the threshold of Organic Agriculture legislation, depending on the year, harvest and fermentation. •A great diversity of apples. 

At Sicéra, there are 10 hectares of orchards bringing together 15 varieties of apples, which allows for interesting aromatic profiles and promotes biodiversity. 

Each cider is made from a blend of several varieties: - bitter varieties for structure; - bittersweet varieties for their aromas; - sweet varieties for sugar; - tangy varieties to bring freshness and structure the cider. The varieties of apples used to make cider are specific. 

They differ from table apple varieties or juice apples. •Orchards converting to organic. 

Paul cultivates his orchards under the Organic Agriculture specifications. Under his tall orchards, he grazes his brother's cows, which ensures the fertility of the soil, without the need for any input. In addition, we work with him and our expert partners, with a view to continuous improvement, in line with the concept of regenerative agriculture.   Paul's orchards are in the final year of organic conversion, a process which lasts 3 years. They will therefore be officially labeled AB in 2023; however the products will only be sold in AB in 2024, the time of fermentation, bottling... Allergens: Sulphites
