Soy is high in protein and low in cholesterol. 

It is also a gluten-free flour. 

On the other hand, it has a high nutritional power and contains much more protein than wheat flour. 

It is often added to wheat flour to increase the protein value and prevent it from going rancid. 

It also serves as a binder for sauces or to make cakes and biscuits.
