Petra Evolutiva 0201 is a type “1” flour from an organic mixture of Evolutivo soft wheat grains grown in Sicily. The collective growth and the exchanges among different wheat cultivars lead to the creation of a flour with unique sensory characteristics, different from any other wheat. Type “1” Petra Evolutiva is milled using cylinders in order to respect the very delicate organic soft wheat. The selection of a particular wheat bran ensures the conservation of a high fiber content, without affecting the dough, which results very easy to work.
