This is a very special product, the artichoke. These are cultivated in small plots that overlook the Cantabrian Sea through sustainable production systems where they benefit from the marine influence and the climate of this small enclave of Getaria (Guipúzcoa). Cleaned and cooked whole with olive oil, they are ideal as a garnish, to accompany eggs, ham, meat, fish... and of course, with a splash of EVOO.
