Rusticana pizza base of traditional elaboration. For the preparation of this artisan pizza or classic Roman Focaccia, everything begins with the selection of its ingredients. Selected artisanal flours, durum wheat semolina, EVOO, sourdough, whole salt and yeast. These are mixed and kneaded to rest in a slow fermentation process and with controlled temperature for at least 72 hours. Following a completely manual stretching process, it is precooked in a wood-fired oven to achieve the authentic flavor of Roman pizzas.
