Hummus means "chickpea" in Arabic, and this is the colloquial name for the cold cream to spread chickpeas with lemon and tahini (sesame paste). At Rosara we have interpreted this great recipe from Near Eastern cuisine by adding our ratatouille of vegetables (tomato, pepper, zucchini, olive oil…etc) and a light touch of spices, resulting in a balanced dish full of nuances.
