Agar agar is a polysaccharide, it is a 100% gelling substance vegetable, excellent alternative to jellies of animal origin. IS obtained from red algae native to the Japanese coasts e Californian, very rich in protein and therefore endowed with strong gelling and thickening properties. It is thermoreversible. Do not contains gluten. DOSAGE: from 1gr to 10gr per kg of product. FORMAT: 500 g FIELDS OF USE: Gelato, Pastry, Molecular Cuisine, Cooking Vegan, fruit jellies, jams, puddings, mixology. -- TECHNICAL CHARACTERISTICS: Agar Agar comes in a creamy powder white or yellow in color, odorless and tasteless. It is soluble in water hot at 80 °C, while complete activation of the agar requires heating the product until boiling (min. 100 °C) for 5 minutes. It reacts on cooling towards 42-32 °C. It's a gelling agent average 600 +/- g/cm2. ICE CREAM: it is used in ice cream as a thickener and stabilizing. It avoids rapid dissolution, thus ensuring a creamy ice cream without ice crystals. PASTRY: In particular, it is a fundamental ingredient for the preparation of puddings, bavarois and to thicken jams low sugar content. MOLECULAR CUISINE: it is fundamental in the preparation of jellies soft, marmalade-like, firm and stiff gels like aspic, small round pearls that like caviar burst in the mouth releasing their strong flavor in an explosion of taste, tasty and colorful spaghetti.
