Sorbitol is a sweetener for low content products caloric. It is in white hygroscopic, odorless and odorless crystalline powder fresh and sweet taste. Very soluble in water. Sorbitol find ample space in the food field as an acariogenic sweetener ed low calorie. Its sweetening power is in fact equal to 60% of that of the sugar, but for the same weight it provides 40% fewer calories (2.6 Kcal/g against 4 for sucrose). The taste is fresh and pleasant, but what is even more important is the ability of sorbitol to donate consistency to the product, retaining humidity and improving its conservation (inhibits the development of yeasts, molds and others microorganisms). PASTRY: sorbitol is a very useful ingredient to maintain pastry and leavened products are softer for longer. OTHER: Sorbitol is also a common ingredient in toothpastes, mouthwashes and some cosmetics, to which it gives a soft and pasty. As an excipient, it also finds its place in industry pharmaceutical for the already mentioned hygroscopic properties e sweeteners.
