If you grind the Manitoba kernels into flour, you will find that the Manitoba flour contributes to a more elastic and pliable dough with a superb leavening ability. This is because Skærtoft Mill uses genuine Canadian Manitoba wheat, which contains min. 16% protein. The short, intense summers in the Manitoba region of Canada provide wheat with good conditions to form gluten protein. NOTE: Delivered in a bag with 5 kg.
