They keep naturally for several months at room temperature. ambient (even if the jar is already open!) USE ÜMYs are HANDMADE, INGREDIENT FREE CHEMICAL such as emulsifiers or stabilizers. Thus it appears a thin layer of oil, from the sesame seed only, over time which is quite normal (and demonstrates the naturalness of the products!). JUST MIX THE ENTIRE POT WITH A SPOON BEFORE USE!
