CERTIFIED ORGANIC The pistachio differs from other oleaginous fruits, by its green-yellow color and its partially open shell, which makes it an easy nut to consume. It comes in clusters on the tree, which only bears its first fruits after about ten years. As it matures, the kernel grows until it exceeds the volume granted to it in the shell and the fissure. At the same time, their pericarp (fluffy, fleshy green skin that protects the shell) changes from soft green to purple-pink once the fruit is ripe. HOW TO CONSUME IT: As an aperitif, or as a snack, alone or accompanied (almond, hazelnut, walnut, cashew, dried fruit, etc.).
