Stemmed capers "Tailed capers" in vinegar - in a jar

By tradition in the south of Spain, “encurtidos” (salt or vinegar preserves) are widely used as aperitifs. These stemmed capers are the perfect companion for snacks and convivial aperitifs. They coexist wonderfully with cold meats but also with fish.     Also called caper flowers, this very fragile delicacy requires manual picking before flowering. Macerated in a preparation based on vinegar, wine and salt, these capers are finally sterilized to then be consumed as an aperitif like a pickle. -ORIGIN: Spanish Basque Country - Wild buds, candied seeds - As an aperitif or as a condiment - Vinegar jar In just a few years, Calle el Tato has become the benchmark for the selection and preparation of quality Spanish tapas. Christophe Ducasse, the founder, passionately travels the Iberian Peninsula in search of taste gems both in terms of the quality of the raw materials and the precision of his preparations.
