Dandelion roots have been used for thousands of years. The entire dandelion plant is edible from root to flower. Dandelion roots are harvested in the fall after the flowers and the leaves of the plant have faded. They are dug up, cleaned of soil and root neck, and washed with cold water. After draining, they dry until they no longer secrete milky juice. Pour cold water over 2 teaspoons per cup (200ml) and bring to a boil, then leave to stand covered for about 10 minutes.
