Mesquite has a mild, sweet flavor with hints of molasses, caramel, and chocolate. Once fully ripe, the mesquite pods are picked, then gently dried and ground into a fine powder. Mesquite powder is often used as a substitute for sweeteners and flours in recipes. When baking, substitute mesquite flour for ¼ to ½ of each cup of wheat flour. Mesquite powder can be added to baked goods, pancakes, smoothies, porridge, raw desserts, energy bars, vegetable pancakes, scrambled eggs, soups and BBQ seasoning.
